3. I lightened up my usual baked spaghetti and it was a major hit, even with Stu who hates anything healthy. (Recipe later this week!)
4. Pretty Tennessee sunset on the way to dinner with Lauren Saturday night.
5. It was momentarily cool enough to wear boots Saturday afternoon. And then it got up over 80 degrees. Ewww.

8. I was planning on re-using Levi’s Halloween costume from last year (he was a Grateful Dead dancing bear), but I had him try it on and it was WAY too small. So I went to Target and found him a precious monkey costume. He looks so cute in it and it is very fitting to his personality!
9. Still going strong with my barre classes! I have gone over 20 days in a row. It helps when you have fabulous workout clothing to wear (like THESE Beyond Yoga leggings I am obsessed with!)
Moving on to one of the best “skinny” desserts I have ever made. As you know I have been trying to eat healthier, so when I knew I was going to be in charge of bringing dessert to my parent’s house Sunday evening- I wanted to make something delicious but not super fattening.
These bars start out with a boxed brownie mix (I used Betty Crocker), but instead of using oil, I used plain greek yogurt. They are topped with a fat-free cream cheese and coconut mixture that is swirled with raspberry pie filling. Umm yum.
For the brownies:
- 1 (family sized) box of dark chocolate brownie mix
- 1/4 C. + 2 Tbs. plain greek yogurt
- 2 eggs
- 1/4 C. water
Topping:
- 8 0z. fat-free cream cheese
- 3 Tbs. sugar
- 1 egg
- 2/3 C. coconut
- 1 (10 oz.) can raspberry pie filling
- 1/2 C. chocolate chips (optional)
- Preheat oven to 350.
- In a bowl combine brownie mix, greek yogurt, eggs and water. Stir until completely mixed and pour into greased 13×9 baking dish. Set aside.
- In a small bowl beat cream cheese and sugar. Add egg and coconut.
- Top brownie batter with spoonfuls of the cream cheese and coconut mixture. Fill in empty spots with spoonfuls of the raspberry pie filling.
- Take a knife and run through batter, swirling the cream cheese and raspberry filling.
- Place in oven and bake for 30-35 minutes. Do not bake more than 35 minutes!!
- If desired sprinkle with chocolate chips while still warm. Refrigerate for at least 1 hour.
